Banh bao banh vac, known as white rose. The family workshop is at 533 Hai Ba Trung, north of the centre; the dumplings are served throughout the old town.

Why it's unique

The recipe has stayed inside one family for three generations, and that family supplies the restaurants. So a dumpling you can order in dozens of places across town is made in a single kitchen.

That is not a claim about how good it is. It is an unusual fact about how a town's most recognisable food actually works, and it is checkable: the trade is not a secret locally, it is simply invisible from a menu.

Before you go

Go to the workshop rather than to a restaurant. The folding is the whole craft and you can watch it: the dough is pressed and pinched into a rose shape by hand, fast, all day.

Order both kinds. Shrimp and pork arrive on the same plate and the pork one is the one visitors skip.

The fried garlic on top is made in house and is half the dish. If it tastes stale you are eating a reheated plate.
