Why it's unique
It is a working replica of a specific historic building rather than a themed interior. The adobe was made and laid to the original construction, the footprint follows the fort's plan, and the building itself is on the National Register.
The menu follows from the premise: bison, elk, quail, and Rocky Mountain oysters, which is to say the food actually traded at the original post rather than a modern menu in a costume.
